AMY’S FAV’ RECIPES: JUNE EDITION OF HEALTHY EATING

Hello, my fellow foodies!

The sun is out, gardens are in (or going in) and local Farmer’s Markets are open! By the way—if you’re not quite ready to be out with the crowds, many of the local Farmer’s Markets are offerings curbside pick-up and delivery options. Definitely worth checking out if that’s a better option for you so you don’t have to forego fresh produce!

This month marks the real kick-off for produce like greens, melons, and a ton of other fruits and veggies coming into their prime. And let me tell you, that makes for some delicious meals! There is nothing quite like grabbing fresh produce and using it to prepare a meal. Especially when it’s right from your own garden!

As Julia Child said, “You don’t have to cook fancy or complicated masterpieces—just good food from fresh ingredients.” Boy was she right on that one!

Here are a handful of delicious recipes that incorporate this fresh produce and are easy to prepare!

Chimichurri Poblano Turkey Burger

Grilled Peaches with Cinnamon-Sugar Butter

Watermelon Sorbet

Corn and Zucchini Salad with Feta

Grilled Eggplant Salad with Freekeh and Yogurt Dressing

Open-face Eggplant sandwiches with Ricotta & Pickled Onions

Radish Rainbow Salad

As always, let me know if you tried any, or shoot a recipe my way that you love!

Happy Eating, friends!
