AMY’S FAV’ RECIPES: APRIL EDITION OF HEALTHY EATING

Hello, my fellow foodies!

This month, I thought I would share a quote that I love by Karen Salmansohn about eating. Here goes, “Healthy does NOT mean starving yourself EVER. Healthy means eating the right food in the right amount”.

If you’re nourishing your body by eating the right foods in the right amounts, you will feel better, function better, and ultimately have a balanced body!

Here are some of my favorite recipes for the month, utilizing foods that nourish the body and mind! And, as a bonus, lots of them incorporate produce that is in season. (Bonus for accessibility and that fresh flavor that seasonal veggies bring.)

Arugula Salad /Chickpeas, Beets & Walnuts

Baked Cod with lemon, garlic & thyme

Chocolate Brownie Cookies

Crispy Quinoa Cakes w/Rosemary Mushrooms & Lemony Arugula

Gnocchi Al Pesto with Charred Green Beans & Lemon Zucchini

Portuguese Pea Stew with a Twist

Quinoa Asparagus Salad (aka Spring tabouli)

Veggie Fritters Recipe | Easy, Healthy, Gluten-Free

And a special treat dish that I eat multiple days a week…

Open-Face Breakfast Sandwiches (Brightline Friendly!)
½ English Muffin
1 Fried Egg
1 Veggie Sausage patty
¼ Avocado
Pea Shoots (small bunch)

As always, let me know if you tried any, or shoot a recipe my way that you love!

Happy Eating!
